Your default printer keeps changing on its own

Windows has a setting that automatically changes the default printer every time you use a different one. Turn off that setting and manually pick one. Done.

Windows automatically switches your default printer to whichever one you used most recently. This is meant to be helpful but is annoying in practice. Turning off this automatic setting and picking your default printer manually fixes it.
