Default app keeps resetting back after Windows updates

Windows updates automatically reset your default apps back to Microsoft ones. You'll need to set them again after each update. It takes 30 seconds. Go to Settings → Apps → Default apps and change them back to what you want.

Windows automatically changes your default apps back to its own software when you install major updates. This is by design. Microsoft resets these choices so you see their apps first. You need to change them back each time, but it's quick and simple. The good news is you only have to do it once per update, not every time you use the app.
