Your AirPods won't switch between your iPhone and other Apple devices
AirPods are designed to switch automatically between your Apple devices if they're all signed in with the same Apple ID. If they're not switching, your devices probably aren't using the same Apple ID or AirPods' automatic switching is turned off. Check that all devices are signed in the same and turn on Automatic Switching in your AirPods settings.
Your AirPods remember all the Apple devices signed in with your Apple ID and switch between them automatically. If they're staying on one device, either you're not using the same Apple ID on all devices, Automatic Switching is off, or there's a connection hiccup. Checking your Apple ID and turning on Automatic Switching fixes it.
