Achievements need your console connected to the internet to sync. Make sure you're signed into your account and connected to the internet, then quit the game and reopen it. The console will sync your achievements and they should unlock properly.
Achievements and trophies are tracked by your account on the internet. If your console is offline or you're signed into the wrong account, the achievement won't sync even though you unlocked it in the game. Getting online and signing into the right account will let your console sync all the achievements you've earned.
